On the top floor of PAve, large glass, garage-style doors remain open in warmer months to a welcoming patio where people can sip on drinks and socialize.
“We just wanted to cater to those who wanted to enjoy the outside weather as well as the people who want to be indoors,” said general manager John Geiken. “And we wanted to have something that made sense for South Dakota, because obviously not all months of the year are outside months.”
Out under the sky, there are high-top tables both with and without firepits, plenty of red patio sofas, and other areas to hang out and have a good time with friends. The cold weather changes things a bit. The glass doors close and keep the cold from seeping inside, but the patio is still open with a heated section available.

String lights twinkle over top of the space, bringing in warm mood lighting. Geiken says they were toying with the idea of putting up a light-up sign reading “PAve” on the side of the building, towering over the patio, but they realized they wanted a big bold statement instead. “We ended up coming up with one of the most powerful and simplistic things you can say to another person, and that was ‘I love you,’” said Geiken. From the street below, anyone can see the large red, lowercase letters broadcasting the statement to anyone who’ll look its way. “Before you know it, everyone and their dog wanted a picture in front of the ‘I love you’ sign,” said Geiken.

Before 10 p.m., PAve has an extensive food menu and is a relaxed space ideal for conversation. The patio is open both afternoons and evenings in the summer, but during the winter only the first floor is open until 4 p.m. The menu offers a variety from your standard “bar food” like the Boneless Wings to more out-of-the-box choices. Geiken says one of the most well known appetizers is the Giant Pretzel, which comes with nacho cheese, Monterey jack cheese, and beer cheese. “It was a big, bold idea that we went with for our menu,” he said. “The pretzel is huge and can probably feed four to five people.” Similarly oversized is the El Guapo Nacho, a mountain of ground beef, nacho cheese, Monterey jack cheese, pico de gallo, and black olives all drizzled with sour cream. “We were adamant about having a good steak salad,” said Geiken. “We were toying around with the dressing. We requested a raspberry vinaigrette, and by accident we got an apple lime vinaigrette sent.”

It wasn’t what they thought they wanted for the Steak Bruschetta Salad. After trying the apple lime vinaigrette, they were sure it was perfect to pair with the romaine and spring mix, tomato-onion relish, steak, bleu cheese crumbles, parmesan cheese, and bruschetta bread. Other items to try with your friends range from sandwiches and wraps to burgers, hot dogs, and soup. “We have some strong people in our back of house, and we let them run the show back there,” said Geiken. “When you put that together with good, fresh ingredients, there’s a good mixture of quality and big and bold.”

Entering the specialty salon in historic downtown Sioux Falls, clients are met with the rich croon of a vinyl record as it floats through the air.
A glance around yields furniture with clean lines, items arranged on shelves, and wall art laced with simple, yet bold, shapes. “The vibe of the salon is mid-century modern with lots of vintage radios and vinyl records that we play throughout the day,” said Gimenez. “Imagine being in your super cool aunt and uncle’s pad in the ‘50s or ‘60s.” Accents of wood paneling and various orange, brown, and cream tones are found throughout to further the immersion.

“The inspiration for the salon was taking many of my favorite things: hair, design, music, art and architecture and mixing them all together to make my dream place to work.” A big part of creating the perfect atmosphere in HI-FI is the soundtrack. “The music is all carefully curated here at HI-FI Hair to keep the vibe fresh, funky, and groovy,” said Gimenez. “Guests will hear funk, soul, chill hop, exotica, jazz, and lounge.” Many of the salon’s music can be found in playlists online, Spotify, or SoundCloud. “On the first and third Friday of every month, we host Bangin’ Fridays. DJs create the musical vibe, and I offer bang trims, beard trims, or edge cleanups.” He hopes to extend DJ takeovers to Saturdays as well. HI-FI Hair currently offers haircut and nail services, and Gimenez says they plan to add a color specialist in the spring.

Rewind Gimenez says he spent 22 years of his haircut career in high end, downtown San Francisco salons. In 2019, he and his family moved to Sioux Falls and began his own business in the form of HI-FI Hair.

Social media has been a strong support and influence for her boards. “When I started, I had no idea how popular it was,” she said. “People are so creative and so willing to share their ideas.” Converse shares her own ideas and a look into being “head cheese” of her own business.
“I am a pet groomer. I have been doing that for 25 years, and charcuterie is actually my part-time gig. It almost doesn’t seem fair that I have two fun jobs.” -Lisa Converse I started Charcuterie Element because… who doesn’t love a fancy meat and cheese
tray? It’s a fun way to share a meal and try new things. I have an entrepreneurial spirit, and it’s a creative outlet for me.
The best part of my job is… I love
being creative and having the freedom to make every order unique. I also love when a customer says, “Surprise me,” and I get a chance to take an idea and run with it.
One of my favorite projects has been… I had the opportunity to create charcuterie in
champagne flutes for a wedding. That was an idea that was swimming in my head, and when the bride asked for ideas, she loved it!
My favorite items to include are… unique cheeses that people would never think
to try on their own. I also like to give people the option of some flavor combinations that are truly delicious.

What people might not know about my business… everything is one of a kind, so no two boards are the
same. My best helper is my husband who built my commercial kitchen and tests all cheese products. My friends and family send unique ideas that help inspire me. It’s a family effort.

When we travel, we love to search for craft breweries. My first charcuterie board was at one of our favorite breweries here in town, Watertown Brewing Co.

The hardest lesson I’ve learned in this profession was… making sure I met all the health
department requirements. We received a perfect score, but initially it was a bit of a challenge to make sure all the state and city requirements were met.
My favorite place to go for inspiration is… social media; it has
been a great place to find ideas upon ideas, whether it be different cheeses, ways to style a board, or marketing ideas.
One thing I love about South Dakota is… by all means the
people. We are about family, food, and experiences. Ultimately people want to build memories with family and friends, and food connects us all.

I’m also a member of the Minnehaha County Abandoned Cemeteries Board; we’re a group of volunteers who oversee the maintenance and preservation of over a dozen cemeteries in our county. Sometimes, things get spooky… but mostly it’s a lot of weed wacking.
R i d i n g th e R a i l s I try to get to as many Sioux Valley Model Engineers Society events as possible. No, I don’t have kids, nor am I an aunt. Trains are just rad, and their enthusiasts are some of the most welcoming and interesting people I’ve encountered.
Th e O u t s i d er [s] I actually don’t skate. My involvement with SFSA has stemmed from the art, ideology, and cultural benefits of skateboarding, along with the lifelong friendships I’ve built along the way. Most of my youth, I served as the lookout at skate spots, so I consider creating this skatepark as a natural progression. Plus, the more work I put in for SFSA, the more our crew can skate.

by Alana Snyder City of Sioux Falls communications and marketing coordinator Kieran Tate launched the Sioux Falls Fire Rescue (SFFR) TikTok account in the midst of the pandemic in hopes to raise awareness, while while sprinkling in some humor. Cue fire department members wearing hazmat suits, an array of training and educational skits, and puppet personalities (i.e. “FaceTimes” with Blaze the dog mascot, and Frank the puppet rolling up in a firetruck to the Chamillionaire song “Ridin’”).

“The TikTok account is geared more towards the audience we’ve been missing from the younger group in elementary school, and now we’re hitting the middle school, high school, and college-aged students that we haven’t been,” said Tate. “This is a great opportunity for us to spread information to the age range we’ve been missing in forms of entertainment, education.” The account was gaining traction, but blew up once Tate reshared a skit where SFFR members make a dramatic exit out of the fire station (fog machine and all). This post received over 3 million views and counting. This has led to stitches and duets all over the social media platform.

“We recorded a video with a trend going around about people being overthe-top excited about their jobs, so we did it in the form of us hearing we have to go rescue a kitten and getting all geared up for it,” recalled Tate. “When I posted it the first time, it didn’t do as well as I was hoping because I think I posted it around the wrong time of day. Then we posted it again, and now it’s around 3.4 million views. We got a bunch of messages from firefighters.” Fire apparatus operator Mark Olson says the attention has taken some getting used to.

“We as firefighters don’t usually like to be in the limelight. Part of doing our job is just doing our job and helping people,” said Olson. “If you come around the station and ask [some of] them to do a TikTok, they’ll go hide in an office somewhere to be out of the way and not be in it. We have to like to have fun because we see some horrific stuff. So if we’re not connecting in a different way and enjoying our time in the station, it can be pretty difficult.” Being a big entity like SFFR, Tate did see some pushback at the beginning, but says it’s not only embraced now, but people get excited about it. “When we started this account, there were people around the department asking why we need to be doing this and saying ‘We need to be serious,’ which is totally valid,” said Tate. “It’s been interesting to see the transition from ‘I don’t want the department to do this’ to now having more people that didn’t even have a smartphone when we started who want to follow along. It’s been cool to see the support and acceptance grow.” Along with helping educate viewers, the team also says this has helped them become more approachable and less intimidating, especially to a younger crowd. “One of the things we run into is if there’s a fire where there’s a child, they see us in these big uniforms with tanks on our backs and masks on our faces and think we’re so intimidating,” said Olson. “This may be another way to realize we’re not so scary. It humanizes us, so when they do interact with us, they aren’t scared.” It also has aided recruitment.

“This is a good way to reach [people,] and hopefully some [viewers] will say, ‘That looks fun,’” said Olson. “We want to be able to get the cream of the crop. One way is to get as many applicants as possible and see who fits into the department.” But even before TikTok, fire inspector Brandon Fey says the SFFR has had national recognition. “We have had departments reach out to us about our education program. We are the standard here. We have amazing resources, teachers, and people with good hearts who want to share the love and the education that we have,” said Fey. “We’re tapping into people that want to do that stuff. The video ideas are endless. The crews can pick anything that’s educational to other firefighters or the general public. Our job is pretty cool.”

Community involvement is of the utmost importance for Matt Paulson, who is an entrepreneur, author, and a private equity investor. On December 26, 2006, he started MarketBeat, a financial news and research software company. “It’s an ‘overnight success story’ that took 15 years to get off the ground,” said Paulson. “I made a lot of mistakes and learned a lot of lessons along the way, but things have turned out pretty well.” “There is no shortage of volunteer opportunities in Sioux Falls. I encourage people to get deeply involved in one or two nonprofits that they are uniquely passionate about.” -Matt Paulson Perhaps the most difficult ambition so far has been building the startup ecosystem in the area because, as Paulson says, changing how people think about small businesses is a feat in itself. In 2019, he started Startup Sioux Falls. “It’s also an ongoing effort and will take a few more years to develop a fully fleshed out startup ecosystem consisting of community events, founder peer groups, [and more],” he said. Everyone has dreams and big ideas, but most people never achieve their goals because they don’t have a good plan and aren’t willing to put in the work. You don’t have to have everything figured out on day one, but you do need to continually make concrete steps toward achieving your goals.
ARE YOU A NIGHT OWL OR AN EARLY BIRD? Before I had kids, I was a total night owl and would often play video games or work on my business late. I’ve learned to become a morning person over the years and usually wake up around 6 a.m. now. It’s nice to have a few minutes of peace and quiet before children wake up and the workday begins.
