increasingly, presents as reliably unreliable. Yet, life is about engagement, so we search for new, relevant talismans and symbols to fortify us. For most of us, home and a sense of belonging in it, is the first thing we experience when we wake up, and the last shelter we sense before sleeping, and the ultimate feeling of emotional luxury is a home that feels like home. You can’t write the formula down because it’s different for everyone, but what I wanted to propose with the interiors in this issue is that there are different and unexpected ways to achieve it. The pressure to be stylish is a status choice, but the desire to live well is a personal drive. If you do nothing else these holidays, think a bit about what your possessions do for you, what job do they do, what is their emotional value? arm, ergonomic and integrated craftily into the landscape, this family home, located in Cape Town’s real estate sweet spot, is an exemplar of grand scale understatement, unusual for an area whose stock-in-trade is conspicuous constructions. From the

exterior, designed by architect Antonio Zaninovic, largely camouflaged by leafy, dappled shadows as you approach via an undulating driveway, to the interior, described by Okha Interiors Creative Director Adam Court – who was involved with Antonio’s vision of the project from the outset – as ‘nonchalant, casual almost’, it’s a tantalisingly slow reveal before you experience the full power of the place.

That power is about being seamlessly synthesised into a rare treetop idyll, with a cinematic sense of seclusion that feels both completely natural and unbelievably luxurious. But, achieving emotional luxury is an art because success relies on a very deft orchestration of visual information. Too much style du jour swank and the vibe could morph into the dull din of being

overly fashioney, too much sotto voce anti-statement and it could feel too posed, neither of which would have struck a simpatico chord. ‘We kept it really simple, didn’t over design it, and didn’t impose a sense of statement-making decorating tropes on the space,’ explains Adam. In fact, there are instances where the lack of rule book compliance feels audacious. Such as the L-shaped ‘Monk’

sofa in the living room, positioned with its back to the view, thereby denying the obvious prize but creating instead the very necessary pleasure of a legitimately inviting social space. Another decision was to use no cold materials for the interior architecture. ‘The material language could be termed organic minimalism,’ says Adam. No marble, no metals – the two elements that in design shorthand cue 60

sleek and smart – were not cards that needed playing in this instance. Instead, Adam aimed for patina. Rock face cladding, wooden panelled ceilings, raw off-shutter concrete, herringbone timber or antique finished granite floors. Linen upholstery, velvet dining chairs from Minotti, and moments of scaled up drama via a pair of mid-century Sputnikstyle chandeliers, an oak dining table the

size of an American-made sedan, and an edgy iteration of a tilted, shifted mirror installation, both by Okha, which deliver a perfectly appropriate microdose of highend attitude. The living room leads onto a terrace from which you can walk down to the large rectangular non-rim flowing pool, and a very lovely elevated pavilion a short distance further.

style in a smart conservation area of London is an unlikely setting for provocative contemporary art. Yet architect and interior designer Shalini Misra has created a dramatic space every bit as bold as the owners’ collection of art. Just inside the front door, visitors are greeted by a sculpture called Almech (2011), by the Polish artist Pawel Althamer. Its bone-white face is revealed as bandages mummifying the female form are peeled away. This could be seen as a metaphor for the house itself – its Victorian past stripped to face the future. Step further inside and it becomes obvious that this is not a house for a timid designer. That is surely why Shalini was commissioned. Her projects, which include the interiors of Regent’s Park penthouses and an apartment in New York, are bold, exciting spaces that bear the hallmarks of a designer with expertise in finish and detail. Having been familiar with Shalini’s work, the owners knew not to expect plain white cubed spaces. An essential part of their brief was to make the house, which they share with their three children, bigger, in order to display their art collection. Working in finance and also owners of a gallery in Istanbul, the couple have a collection that includes pieces by some of the best-known artists of the twenty-first century: Gerhard Richter, Anselm Kiefer, David Hockney, Antony Gormley and Tracey Emin, to name a few. The basement was dug deep to create an extra 418 square metres for a swimming pool, gym and spare rooms, making the house nearly 900 square metres across five floors. Weighing up the artworks, Shalini determined where to 64

place them and, in some instances, had to create new spaces. In the basement hall, a Pedro Reyes Los Mutantes mixed-media series of photographs and paintings is hung vertically, column by column, creating a narrative. To recreate the installation as the artist intended, Shalini designed a curving wall, painted a deep mushroom colour. The relocated staircase now moves clockwise between all floors, a choice inspired by Vastu Shastra principles – a traditional Hindu system of architecture meant to bring harmony into the home. Shalini, who read architecture at New Delhi’s School of Planning and Architecture, followed by an MSc in virtual reality at University College London, adheres to the system’s basic principles, and it appears to work. There is also a concealed lift hidden behind bronze doors with hand-embroidered panels. It is just one example of the decorative detailing that Shalini likes. An open-plan kitchen-dining area on the lower ground floor is arresting in its use of exaggerated scale, with an outsize chandelier hanging above an island unit almost as long as the room. A huge photograph by Marina Abramovic, entitled The Kitchen I: Levitation of Saint Theresa (2009), shows the saint in flight above stacked pots and pans; it too hangs on a wall that Shalini created specifically for its size and dimensions. In the open-plan living space one floor higher, the floors and walls were specially reinforced for more large-scale paintings and life-size figurative sculptures. Antony Gormley’s robotic figure, Build (2010), stands guard on black and white marble floors, facing a painting by Anselm Kiefer. Doorways widened for glimpses of artworks beyond open into

a reception area where the family entertains. Overscaled cornices wrap around the french windows to double as pelmets for velvet curtains. A black chevron timber floor leads to an ornate inlaid marble floor, which defines a more formal dining space around a curvaceous table by Massimiliano Locatelli from Nilufar Gallery. Bespoke furniture is mixed with modern design classics, in contrasting textures of leather and linen, velvet and wool, and a smoky palette of deep blue, grey and charcoal. There are golden accents in the curtains and bronze-topped tables. Ascending to the first floor, to the main bedroom and bathroom, the palette – and materials – soften. The flooring combines tan leather tiles laid in a herringbone pattern with 68

timber boards. Clad with wooden slats, the ceiling holds the warm tones of the faux suede and leather wardrobe doors. David Hockney’s painting, Study for the Emperor’s Palace (1981), from his opera set for Igor Stravinsky’s The Nightingale, is displayed above the leather headboard. ‘Headboards should never face north,’ is another Vastu Shastra principle. On the top floor are two further bedrooms. ‘The scale of this home could be intimidating,’ says Shalini. ‘But we have achieved an interior that is warmly welcoming, with communal areas where the family loves to spend time, along with great spaces for entertaining. The artwork is a connecting feature that tells a story throughout the house.’ Q

landscape and this is especially true of the spot where this country house stands. Its rural setting – an area called Manacor in the south-east of the island – has a sense of time standing still. ‘The properties here are huge. Occupying about 100 hectares,’ says Ramón García Jurado, the Madrid-based architect and interior designer who has renovated the house. ‘Their owners are very proud of this island retreat, and lavish the utmost care on preserving them in the best possible condition.’ The approach to the house – an unobtrusive earth track – is dreamlike and, beyond its boundaries, a line of olive, almond and cork trees indicates where the path leads up to the house. Aromatic scents emanate from here all year round. The villa is just a few kilometres from the sea, with the horizon visible from certain vantage points. Depending on how the wind blows, the salty sea air mingles with the many smells here. Built 200 years ago, the house was originally occupied by a farming family who lived off their crops and livestock. Their lives were basic and solitary. But a few years ago, their descendants put the house on the market, selling to a Madridbased family who were looking for a summer and weekend retreat. The house had to be entirely renovated. ‘The laws on construction and alterations to houses on the island are very strict,’ says Ramón. ‘Months passed before we could set the

project in motion. All details, materials and volumes were vetted.’ The 500-square-metre house is divided into two floors. The living areas are downstairs and the bedrooms upstairs, and all the rooms have been restored in a way that preserves the house’s original, authentic Mallorcan spirit. A Gothic vault lined with clay tiles, beams made of a particular juniper wood native to the Balearic islands and flooring with rounded stones, all protected by thick walls constructed from blocks of Mallorcan stone, add up to an authentic example of local architecture. ‘The homeowners are friends as well as clients, so this house has been designed with extra care and love,’ Ramón says. ‘In our many discussions about the type of house they wanted, the same request kept popping up: somewhere you can hang out all day in a sarong and be barefoot most of the time.’ So the overarching concept was for a house that felt as informal as possible, while offering the right degree of comfort and sophistication. The floors are mostly made of a sand-coloured resin, which has a unifying effect and is easy to maintain. By contrast, the entrance hall has a spectacular textured floor made of pebble-like stones that has been kept intact. When explaining how he created the interior, Ramón talks about how he reconciled old and new harmoniously. ‘The house has a mix of colourful pieces by young artists, vibrant contemporary ceramics and corals and characterful furniture and artefacts – from Louis XIII dining chairs to antique drums and African sculptures. These are combined with modern sofas covered in white cotton.’ Just as I am about to leave the house, the caretaker couple who look after it mention that the owners often spend weekends here in winter: ‘They hadn’t planned to, but they were surprised by how restorative staying here is. It’s almost as if it is their own private spa.’ Q

A

t the end of a winding lane bordered by a tangle of honeysuckle and wild roses lies a magical garden far removed from a traditional East Hampton manicured showpiece. To the sounds of waves crashing on the beach, this one unfolds like the petals of a flower in surprising and delightful ways, a pleasure still fresh to its owners, Katharine and William Rayner. If Kathy had asked anyone whether it might be possible to create an intricately elaborate garden on the leeward side of a sand dune between the roaring Atlantic and Georgica Pond, she would have been told no. But Kathy didn’t ask – she went ahead and did just that.


After renting Woody House for eight years, Kathy bought it in the late eighties not long before her marriage to Billy, and fixed it up just in time for the arrival of Hurricane Bob. In the decades since, the sloping terrain’s cutting garden and few flower beds have evolved into a magnificent confection of spaces, paths, vistas, bowers, and follies that invoke the garden cultures of England, Italy, Persia and India. Not lacking in a garden pedigree – her mother, Anne Cox Chambers, created, with Peter Coats, Rosemary Verey, and Ryan Gainey, the celebrated sixteen-hectare grounds of her Provençal home, Le Petit Fontanille – Kathy nurtured her interest in horticulture by visiting storied estates and reading voraciously on the subject. She admits to feeling most affected by the memoirs of Babur, founder of the Mogul empire, and the writings of Vita

chairs on either side. Inspired by Villa Medicea di Castello in Florence, the garden makes a perfect spot for dinner on a moonlit night, with lanterns around the shimmering pool and the grey-green leaves of olive trees, silver-leafed licorice, and Artemisia glinting across the water. An existing walled herb garden became a Mogul enclave, inspired by India’s response to Persian influence and thus reflecting two cultures at once – there’s only so much space on a sand dune. A pair of marble elephants greets visitors at the garden’s upper level before they descend by a small, double flying staircase – evoking the one at Swan House in Kathy’s native Atlanta – that encircles a carved fountain in the shape of the Hindu deity Ganesha. His spouting trunk is the spring of a bridged rill running down the garden’s centre, planted with lotus, water lilies, and water lettuces and leading to another fountain in

Pekingese as they appear. The Hoops Walk, an homage to Monet’s garden at Giverny, is a glorious meandering grass path flanked by a colourful riot of poppies, old-fashioned hollyhocks, Rudbeckia, and Phlox, and, overhead, hoops covered in a burst of five kinds of pink roses. You can walk this garden and the changing light will keep you constantly entertained. From the Pear Tunnel, where espaliered fruit trees are interplanted with Rosa ‘Reine des Violettes’ and Clematis ‘Étoile Violette’ to hang as a purple fringe overhead, you will occasionally hear the squawks of guinea hens in their enclosure near the guest cottage (a former boathouse renamed the Pond House). You might even see a purple martin returning to one of the towering cluster of houses beyond the greenhouse, having eaten its daily quota of mosquitoes.

You can walk this garden and the changing light will keep you constantly entertained Sackville-West – representing a span of five centuries. So she was very much at home within the walls of the Persian garden, as woven into ancient carpets, long before she travelled to Iran herself in autumn 2015. Visiting the legendary gardens of Italy, Kathy understood that their reliance on architectural elements would be completely inappropriate if divorced from their stone villas, though some things could be borrowed. From Sissinghurst, she not only imported the idea of a White Garden, she realized that its tiny passages were just what she should adopt on Long Island because an intricate evergreen structure would help tame the winds and protect the plants. She moved the original cutting bed to make way for an open Italian Garden, complete with a shell-encrusted grotto created by Simon Verity from tufa, local seashells, quartz and limestone, with dripping fountains and massive shell 82

the shape of a lotus flower lazily gurgling cooling water over its marble surface. This is a folly in the true sense of the word. Don’t be surprised to one day see a purely Persian paradise squeezed in somewhere, just as a new vegetable garden, with enclosures woven from the invasive phragmites that edge the pond, is already in the works. The project never has to end, because there was never a master plan. The Mogul Garden is perhaps the most elaborate of all the spaces, and therefore also where the sound of ocean waves is the most unexpected; but you can step out of it and be somewhere very different at the swing of a gate – perhaps the almost tropical-looking Mediterranean Walk, with its rusticated oak arbor inspired by the gardening genius Gertrude Jekyll. Or the Dog Garden. Dogs are important to the Rayners, who have five, and a standing order with the local pet-adoption society, ARF (Animal Rescue Fund of the Hamptons), to send along rescue

Roses are everywhere in these gardens, and guests flock to visit, guided by Kathy’s accomplice of fifteen years in matters horticultural, John Hill, who offers a litany of their names. The provenance of one beauty may not be on their curriculum: This stranger caught my eye on a corner trellis near the front door. Kathy tells me it started out as a nameless Korean-deli purchase, left behind in its little foil-wrapped plastic pot after a birthday luncheon. She took it home and put it in the ground. It has climbed up the trellis and opens its buds to look more like the Tudor rose of heraldry than Rosa ‘York and Lancaster.’ Cellphones don’t work well here, and more than once has a stray visitor kept the others waiting to sit down at the table. It is a playful spirit that has created these gardens, in consultation with both friends and highly respected professionals who share a similar passion, bandying about ideas like shuttlecocks in a never-ending game of badminton. ith impossibly long stretches of sandy beaches, and being one of the sleepiest towns on the West Coast, Yzerfontein is the preferred retreat of many a city dweller wanting to escape the grind. Having owned this particular property for over 30 years, the homeowners decided to break down the previous house and rebuild a threestorey home for their ever-growing family, which now includes three generations. Sumari Krige, interior designer and owner of La Grange Interiors, was called on to help realise the vision of a modern, luxurious seaside home. How was the interior conceived? The property has been in the family for many years, and when they decided to rebuild their home, they didn’t just want a new house. Rather, they wanted a home that looked and felt lived in, that made spacial sense, and of course, had enough room for eating and entertaining. I was called in, along with Stellenbosch-based architect Dirk Bester, to make this vision a reality. But it was always intended to be more than just a vacation home? This may be a house on the beach, but it’s more than just a beach house. And the owners didn’t want it only to be used during the holidays. They wanted the house to reflect daily living, and that is what Dirk and I tried to capture in the architectural and interior design. How did you go about making sure it wouldn’t be ‘just another beach house’? I made sure that the R IGH T, F R O M TO P WITH THE DOORS

‘THE ATTENTION TO DETAIL, AND THE LEVEL OF MODERN COMFORT AND STYLE, MAKE IT STAND OUT AMONG ANY HOUSE’ interior reects the family. It’s authentic, functional and there is a sense of luxury throughout. That being said, each piece of furniture works hard and serves a purpose; nothing is there just for the sake of it. After all, when the entire family gathers – sometimes all three generations at once – there is high foot trafďŹ c, so every square metre counts. You speak about luxury. How did you bring this into the home? Certain spaces exude luxury. Like the kitchen with its oating island that deďŹ es the laws of gravity. But there are also small luxurious moments everywhere. can be found in the upholstery on the couches, the linen on the beds, and the gorgeous attention to the walls. I also played with texture. Because the overall palette was rather muted, I wanted to weigh it down with wood, metal and reective surfaces such as glass. Would you say the attention to detail is a deďŹ ning aspect of the house? Most deďŹ nitely. Look at rooms such as the library. The attention to detail, and the level of modern comfort and style, make it stand out among the houses you ďŹ nd in the area.

Although the house is undeniably modern, it seems to be so much more than that? Trying to make a space modern can often alienate the people inhabiting it. It’s about being subtle in each element you incorporate. Besides giving the house modern appeal, I also wanted the owners to see themselves in the home from the ďŹ rst moment they stepped inside it. How did you go about achieving that? Both the owners are creative and have a love of beautiful things. One is a talented artist, and when I saw her work, I knew the pieces had to live on the walls. They also own a protea farm called Edelweiss just outside of Piketberg, and what better way to celebrate their love of fynbos by bringing the plant into the home. TIRAMISÙ LAYER CAKE WITH MASCARPONE MOUSSE SERVES 12

Strong coffee can replace the espresso, but there’s no substitute for quality sweet Marsala (the kind for drinking not cooking). It gives the cake a boozy, fragrant edge that plays well against the bitterness of the espresso. SOAK 3 /4 cup (190g) sweet Marsala 1 /2 cup plus 2T (150g) brewed espresso, cooled FILLING 11/2t unflavoured powdered gelatin 1 cup (224g) heavy cream 4 (59g) large egg yolks, room temperature 2T (26g) sweet Marsala 2T (26g) granulated sugar 1t vanilla extract 1 /2t kosher salt 235ml (227g) mascarpone ASSEMBLY Vanilla Genoise (see page 102) Espresso Swiss Meringue Buttercream (see page 104) SOAK Combine Marsala

and espresso in a small bowl. Cover and chill. DO AHEAD Soak can be made 3 days ahead. Keep chilled. FILLING Place 1/4 cup cold water in a bowl and sprinkle gelatin evenly over; chill until ready to use. Beat cream in the bowl of a stand mixer fitted with the whisk attachment on medium-high speed until medium peaks form. Scrape whipped cream into a medium bowl; cover and chill. Reserve bowl. Whisk egg yolks, Marsala, sugar, vanilla and salt in a medium heatproof bowl

until smooth; set over a saucepan of barely simmering water (do not let bowl touch water). Heat, whisking constantly, until yolks are lightened in colour and doubled in volume, about 5 minutes. Mixture should feel warm to the touch. Remove egg yolk mixture from heat and scrape into reserved bowl. Fit bowl onto mixer. Remove saucepan from heat and pour out water, then scrape in softened gelatin. Heat over medium-low, swirling pan often, until gelatin is dissolved, about 1 minute. With mixer on medium speed, stream gelatin into egg yolk mixture. Beat until sides of bowl are cool to the touch, about 2 minutes; add mascarpone and beat until smooth. Remove bowl from mixer and gently fold in chilled whipped cream. You should have about 4 cups mousse. Cover with plastic wrap, pressing directly onto surface; chill until set, at least 4 hours. DO AHEAD Mousse can be made 3 days ahead. Keep chilled. ASSEMBLY Line a 23cm-diameter cake pan or springform pan with plastic wrap, pressing into bottom and leaving generous overhang. Fit a 1-piece round of cake into pan, placing bottom side up. Using a pastry brush, dab a quarter of soak across entire surface of cake. Stir chilled mousse to loosen, then scrape a third over cake and smooth into an even layer with a small offset spatula. Place another round of cake, bottom side up, on top of mousse, this time using a 2-piece layer. Repeat soaking and filling process. Top with the remaining 2-piece round of cake, bottom side up, and repeat soaking and filling process one more time. Top with remaining 1-piece round of cake, bottom side up, and brush with remaining soak. You

should have 4 layers of soaked cake separated by 3 layers of filling. Wrap plastic overhang up and over cake; chill at least 12 hours and up to 2 days to allow mousse to set and cake to absorb soak. To ice, remove plastic from top of cake and invert cake onto a cake plate or platter. Remove pan and plastic. Dollop about 1 cup buttercream over top of cake and smooth across top and down sides, creating a very thin base layer. You want to fill in any gaps, adhere any crumbs to the cake, and seal in the fillings (this is called a crumb coat). Chill cake 10 minutes, then scrape remaining icing on top of cake and spread all over, working down and around sides. Decorate as desired. DO AHEAD Cake can be made 2 days ahead. Chill until icing sets, then cover loosely with plastic wrap. Let sit at room temperature 1 to 11/2 hours before slicing.

FILLING Place 1/2 cup cold water in a bowl and sprinkle gelatin evenly over top; chill until ready to use. Cook mango purée, lemon juice, salt and 11/2 cups sugar in a medium saucepan over medium-low, stirring to dissolve sugar, until steaming (don’t boil), 5 to 7 minutes. Meanwhile, whisk eggs, egg yolks, and remaining 1/2 cup sugar in a medium bowl until pale and foamy, about 1 minute. Ladle some mango mixture into egg mixture, whisking to combine, then stream egg mixture into remaining mango mixture, whisking constantly. Cook, adjusting heat to keep mixture just under a simmer and stirring constantly with a heatproof rubber spatula, until thick enough to coat spatula and an instant-read thermometer registers 76°C, 8 to 10 minutes. Remove from heat and scrape in gelatin; stir to dissolve. Add butter, whisking in a piece at a time, then gradually stream in oil, whisking constantly. Strain curd through a fine-mesh sieve into a medium bowl. Set in a larger bowl partially filled with ice water and stir to cool quickly. You should have 1

ASSEMBLY Line a 23cm-diameter cake pan or springform pan with plastic wrap, pressing into bottom and leaving generous overhang. Fit a 1-piece round of cake into pan, placing bottom side up. Using a pastry brush, dab a quarter of soak across entire surface of cake. Stir chilled mango curd to loosen, then scrape a third over cake and smooth in an even layer with a small offset spatula. Place another round of cake on top of curd, bottom side up, this time using a 2-piece layer. Repeat soaking and filling process. Top with the remaining 2-piece round of cake, bottom side up, and repeat soaking and filling process one more time. You should have around 4 cups ganache. Cover and chill until set, at least 4 hours. DO AHEAD Ganache can be made 3 days ahead. Keep chilled. GENOISE MAKES ENOUGH FOR ONE 23CM 4-LAYER CAKE

Classic genoise can be flavourless and dry. Not this one: It’s moist, eggy, slightly sweet, and tempting to eat plain. non-stick vegetable oil spray 16 (240g) large egg yolks 11/2 cups sugar, divided 12 (360g) large egg whites 11/2t kosher salt 2T vanilla extract 12/3 cups (200g) all-purpose flour; if making chocolate version, decrease by 6T 1 /2 cup (50g) Dutch-process cocoa powder (for chocolate genoise; optional)

Place racks in upper and lower thirds of oven; preheat to 205°C. Lightly coat two 46×33cm rimmed baking sheets with non-stick spray and line with parchment paper, leaving a slight overhang on longer sides. Smooth to eliminate air pockets. Lightly coat parchment with non-stick



spray. Beat egg yolks in the bowl of a stand mixer fitted with the whisk attachment on medium-high speed until light and frothy. With the motor running, gradually stream in 3/4 cup sugar and beat until super voluminous and light and mixture leaves a very slowly dissolving ribbon when it falls off the end of the whisk and back into the bowl, about 4 minutes. Rub a small dab between your fingers – it should be grit-free (this means all the sugar is dissolved). Scrape yolk mixture into a large wide bowl. Thoroughly wash and dry mixer bowl and whisk, then beat egg whites and salt on medium-high until frothy. Increase speed to high and gradually add remaining 3/4 cup sugar in

a steady stream. Beat until meringue is glossy and forms medium peaks, about 3 minutes; beat in vanilla. (Do not overbeat – it will look dry and curdled – this makes it difficult to fold in and yields a dense genoise). If making chocolate genoise, sift flour and cocoa powder over egg yolk mixture (or just flour if making vanilla). Vigorously fold in with a large rubber spatula, running it down along bottom of bowl and lifting up through centre and over the top as you rotate bowl. The mixture will seize up and thicken quite a bit. Add one-third of meringue and mix thoroughly to incorporate (this will lighten the batter). Gently fold in remaining meringue in 2 batches (err on the side of mixing less rather than more; it’s okay if a few streaks of batter remain). Divide batter

between prepared baking sheets and spread evenly with a large offset spatula, working into corners. Bake, rotating pans from top to bottom and front to back halfway through, until top is golden and centre springs back when gently pressed, 10 to 14 minutes. Let cool. To cut out rounds, fit a 23cm-diameter cake or springform pan into a corner of the baking sheet and work a small paring knife around pan to cut out a circle. Move cake pan directly next to the first cutout and cut around it again to make a partial circle (the sheet isn’t large enough to cut out 2 full circles). Then move pan so you can cut another partial circle using as much of the remaining cake as possible. Align the 2 partial circles so they overlap to form a 23cm round. Trim overlap so cake pieces fit together in a single layer. Save scraps for another use (trifle!). Repeat cutting process with second cake to make 2 more rounds. When you’re done, you should have four 23cm rounds (2 whole rounds and 2 formed from multiple pieces.) DO AHEAD Genoise can be baked 1 day ahead. Store tightly wrapped at room temperature, or freeze up to 1 week. Thaw at room temperature before using.

SWISS MERINGUE BUTTERCREAM MAKES ABOUT 4 CUPS

This silky, stable icing smooths beautifully over cake and can take any number of flavourings, from vanilla to chocolate to espresso. BLACK FOREST LAYER CAKE WITH CHERRY PRESERVES

1 cup plus 2T granulated sugar 5 (135g) large egg whites 1 /2 cup (65g) powdered sugar

1 cup plus 5T (300g) unsalted butter, cut into pieces, room temperature 1t vanilla extract 1 /2t kosher salt 1 vanilla bean, split lengthwise; 155g bittersweet chocolate, melted, cooled but still liquid; or 3T espresso, cooled

Combine granulated sugar and egg whites in the bowl of a stand mixer and set over a saucepan filled with 2.5cm of gently simmering water (do not let bowl touch water). Heat, whisking constantly, until sugar is dissolved and an instant-read thermometer registers 46°C, about 5 minutes. Fit bowl onto stand mixer fitted with whisk attachment and beat on medium-high speed until meringue is stiff, glossy, and dense, about 5 minutes. Turn off mixer, add powdered sugar, and mix on low speed until incorporated. Increase speed to medium-high and beat until the bowl is cool to the touch, about 2 minutes. With the motor running, add butter a piece at a time, incorporating fully before adding the next piece, 8 to 10 minutes. If mixture starts to look chunky or liquidy, just keep beating; it will come back together. Scrape down the sides of the bowl and add vanilla extract and salt. Beat until buttercream looks glossy and smooth. Scrape in vanilla seeds (discard pod) or add chocolate or espresso, depending on desired flavour. Beat until smooth. DO AHEAD Buttercream can be made 3 days ahead. Cover and chill. Bring to room temperature, then beat until smooth before using. Q

There is power in African design. We are surrounded by so much natural beauty and artistry – even Hermès loves the freshness and innovative designs. We have used Zulu symbolism with the amasumpa motif that sings and celebrates our culture and life force. This signature motif is seen in the circular pattern on the ‘Savanna Dance’ scarf boarder.

Fée Halsted The Ardmore founder and Hermès collaborator gets real

I fell in love with an Hermès scarf as a student. I was shocked at how expensive it was but I had to have it so I swallowed hard and paid for it. This scarf was pinned to my wall at varsity and it inspired many of my earlier artworks. I dreamt that one day I would have Ardmore designs on an Hermès silk scarf.

Dare a little. I arrived in Paris to exhibit our pieces at a ceramic fair called Les Journées de la Céramique. I didn’t have many props to show off the pieces but my hostess had beautiful orange Hermès boxes that I knew would work perfectly. My daughter, Megan, was worried 128

Share your success. I have always loved growing and nurturing the artists of Ardmore as well as young students. It has been very special for me to share this experience with all three my children. I urged my youngest daughter, 16 at the time, to present to Hermès at the initial meeting and my eldest daughter, Catherine, has been influential in creating the look and feel for both the Hermès scarves and the ‘Zambezi’ fabric collection. I am also very proud of my son, who runs the business side of Ardmore and is dedicated to continuing its legacy. Q

Trust your instinct. When we designed our first scarves for Hermès, we submitted two scarf layouts but they were only interested in the design that featured elephants, giraffes, zebra and crocodiles. Just before my daughter and I left for London, I said to her: take the leopard and monkey one. Today, ‘Savanna Dance’ has featured on silk, women’s apparel, jewellery, bathing costumes, beach towels and now even skateboards and surfboards.

that it might not be the right thing to do, especially as we were in Paris, so I covered the logo with our artworks. At the fair, there was a lady admiring our works who commented on the use of the boxes. It so happened that she worked for Hermès as a jewellery designer and set up our first meeting.
