CELEBRATING 10 YEARS

Roast Chicken 2. Melt butter in a sauce pan, add onions and sauté on medium heat for 1-2 minutes, add pistachio nuts and sauté a further minute before adding the crumbs, lemon zest, cranberries and sage, season with salt and pepper, stir well and set aside. 3.Rinse chicken under cold water and dry with a kitchen towel. Season the inside of the chicken with salt and pepper, a sprinkle of paprika, rub the outside with oil and season with salt, pepper and paprika. 4. Gently separate the skin from the breast at the cavity end of the chicken (not the neck end). Place the stuffing under the skin. Fill chicken with remaining stuffing.

Serve with roast vegetable salad.

Press onto the bottom of an 8-in. square baking dish coated with cooking spray.

Bake at 180°c for 9-11 minutes or until set and edges are lightly browned. Cool on a wire rack. In a large bowl, beat cream cheese and remaining sugar until smooth. Beat in orange juice and vanilla. Fold in beaten cream. Spread over crust. In a microwave-safe bowl, heat blueberry jam on high for 15-20 seconds or until warmed; gently stir in blueberries. Spoon over filling. Refrigerate until serving.

INGREDIENTS

180 gms white cooking chocolate 2 cups thickened cream 1 tbs sugar 1 tsp vanilla essence 1 tbs hot water 1 1/2 tsp gelatine powder

METHOD

Place all ingredients, except water and gelatine, in a saucepan over medium heat until chocolate has melted. Place hot water in small bowl, sprinkle gelatine over and stir until dissolved. Combine with chocolate mixture. Add a few drops of red food colouring, mixing until you get an even pink colour. Pour into 6-8 small ramekins or glasses and set in fridge 4 hours. Next top with whipped cream. If desired, top with sprinkles. Serve or store in the refrigerator to serve later in the day.

Lemon Baked Cheesecake INGREDIENTS

125g butter, melted 250g crushed sweet biscuits 500g cream cheese 200g castor sugar 1 tablespoon cornflour 3 eggs 2 tablespoons lemon juice Pinch of salt 2 cups sour cream

METHOD

1. Preheat oven to 180C (160C fan forced). 2. Line base of tin with baking paper 3. Crush biscuits in a food processor. Add butter and mix together. 4. Press crumb mixture into base of 22cm tin. 5. Beat cream cheese and sugar in an electric mixer until smooth. 6. Beat in cornflour, then add eggs one at a time, beating each time just until smooth. 7. Add lemon juice and salt. 8. Add sour cream and beat briefly to combine. 9. Pour batter into tin and bake for 50 minutes 10. Cool completely in tin on a wire rack and refrigerate for several hours or overnight before serving.

5 TIPS FOR A PERFECT CHEESECAKE When you’ve got the know-how it's easy to make a fabulous looking cheesecake. Follow these tips: 1. Plan ahead Take the cream cheese out of the fridge at least 30 minutes before use so it's soft, easy to work with and you won’t get lumps in your cheesecake. 2. Build a perfect base Use a drinking glass to tightly press the biscuit mix into a straight sided dish. Chill in the fridge until firm before adding filling. 3. Don’t overtake If a cheesecake bakes for too long or at too high a temperature, it will be dry and the surface will brown and crack. It’s cooked if you gently shake the pan and the filling has a slight wobble in the centre. 4. Avoid cracking If you remove the baked cheesecake from the oven suddenly it can crack, so turn off the oven, leave to door ajar and rest your creation in the oven to cool completely, then chill it in the fridge. 5. Cut clean Cheesecakes can be messy to cut, so select a long-bladed knife, run it under very hot water and wipe dry. Cut the cheesecake in half, then in quarters, then slices. Rinse the knife after each cut and work quickly while the knife is hot and clean.

Celebrating 10 Years with a free gift This little community magazine has been circulating in Mawson Lakes for 10 years. Some readers' memories go back that far. The magazine started out in 2008 as Mawson Lakes Directory - a directory advertising businesses, in what was then a raw but developing suburb. Then in 2011 I bought the publication and changed it into a lifestyle magazine. A name change to Mawson Lakes Living reflected a new direction where advertising was still an integral part of the magazine, but the true beauty was in the journalistic style, the useful information and the platform it provided for the artistic talents of our population - our photographers and artists who’ve been featured on the covers and in the pages ever since. These elements give the magazine character and depth that local people tell me they love. It’s always a thrill to see yourself, your children, your dogs, the shopkeepers, and the people you know and live with, in print, isn’t it? Producing a quality magazine each month takes a lot of effort but a band of community-minded volunteers (myself included) share the work. I acknowledge the team who have brought you the anniversary issue this month. Others have gone before and I am grateful for their help.

Top selling suburbs According to the Real Estate Institute of Australia the top selling suburbs in the December quarter 2017, in terms of recoded sales were Mawson Lakes, Morphett Vale and Aldinga Beach. Elder Smith Rd As a resident of ML since 2014, I'm in despair at recent changes to traffic flow on Elder Smith Road (ESR). The department of transport (DPTI )opened ESR to B-Double trucks and the impact has been increased noise and exhaust emissions. ESR has become a built up area in between the railway bridge and Salisbury Highway and residents are suffering. Trucks persistently use engine exhaust brakes at all hours. Recently the DPTI widened Elder Smith Rd east of Salisbury Highway, doubling the length of the zip merge lane. This has been a disaster. Traffic bottle necks at the Cascades exacerbates traffic congestion, as well as making it harder to enter/exit the Cascades. My quality of life has been impacted severely by the constant sounding of car and truck air horns/exhaust brakes at all hours. Hoon driving is a big issue too with no interest by SAPOL to radar this area. Duplication of ESR is earmarked for the next 15+ years, but issues need sorting NOW. Steve Myers The problem of Elder Smith Road Elder Smith Road and bridge in Mawson Lakes is a State Government road controlled by the Department of Planning, Transport and Infrastructure (DPTI). Tens of thousands of vehicles use this road each day as a connector between Salisbury Highway and Main North Road and residents use the road to access their homes. To ease nose-to-tail traffic and improve safety, following more than a dozen crashes at the site, the road should be either considered only for local traffic, or duplication should occur. Therefore, I have started a petition to call on Premier Steven Marshall and the State Government to act now and duplicate the road before the community suffers further. Quiet please in library I can relate to the comment in MLL/March on disturbance in the library. A good library is a fabulous resource in the community, especially if it has spaces for quiet reading, studying, attending to research and admin services (computers, scanning and photocopying), but a noisy library is a distraction and annoyance. I was at Salisbury Library a few weeks ago and an organised group in a room were playing guitars and singing, not very well I might say. The noise filled the library for several hours and was so invasive it drove me away. There are plenty of places for noise outside a library. Keep libraries quiet and reflective. John Faberson Shops shut Deregulating shopping hours is long overdue. I moved to Mawson Lakes from Queensland and I can’t believe that Woolworths and Target do not open on a Sunday until 11am and close at 5pm. If the SA Upper House is the obstacle to this, and other reforms, perhaps the Upper House should be abolished like in Qld which doesn’t seem to have problems governing its state. Energy revolution The article on the energy revolution in MLL/April and the pic of students on campus was brilliant and reassuring. I had no idea so much was happening here. Energy production and storage is where the money is. An analysis of salaries on job site SEEK showed that jobs in the resources, energy and mining sectors generally afford six figure salariesthe highest salaries in SA. Philip Adey

Where is Nigella? Whatever happened to Nigella’s page in MLL/ April? We always turn to page 28 first and Nigella wasn’t there. Is she OK? Ed: Nigella is fine, she somewhat reluctantly gave up her chat in March because the magazine was so full I needed the space, but she's back this month with lots to say. She even has a recipe in the Anniversary Cookbook p28.

Protecting the urban forest A council in Adelaide is mapping all the trees in the area on an interactive database that is accessible to the public. People can look up the species of trees, their age and measurements and their environmental factors such as how much oxygen the tree produces and how much pollution it removes. Trees are colour coded on the map so jacarandas have purple dots, river red gums have red dots and green ash are shown with green dots etc. Each tree has an ID number so the public can report tree damage and problems to the council. Take a look at www.burnside.sa.gov/environment/urbanforest. How good would it be if Salisbury Council followed this environmental example. Wesley Dierker

Too many supermarkets The Travelator on your cover( MLL/April) enticed me over to the Capital St Centre but the place lacks vitality and interest. Adelaide has more supermarkets per square metre than anywhere else in Australia. I'm not sure we need another supermarket in Mawson Lakes. David Zimm Electronic eye on parking Ignoring time limits on parking is a problem around the rail station where I live. Rail and bus commuters park all day in our streets meaning that residents are locked out and businesses cannot accommodate customers. I'm pleased to see that the council is trialling new measures in Euston Walk and Metro Pde where smart parking sensors will detect when a car arrives and how long it stays and send the information to parking inspectors. My advice to commuters is, watch out where you park and don’t whinge when you cop a fine. BN Fraser, Euston Walk 6

Get set for more traffic and noise Ambulance sirens, increased traffic and more flights overhead is the future for Mawson Lakes, according to the 2018 master plan for parafield airport, as its owners, Parafield Airport Ltd, commercialise the land surrounding the airfield and abutting The Bridges. Owners of the airport plan a bulk shopping precinct along Main North Road, a major new SA ambulance base, and amongst all this urban development there will be an expansion of runways to accommodate an increase in pilot training. Residents are not happy with the commercialisation of the airfield which should have plenty of unoccupied land around it for safety reasons. You can see the masterplan at www.parafieldairport.com.au Raymond Couts, The Bridges Fishing hazards around lake We regularly walk around Shearwater Lake where we find waste fishing lines, crab shells and other remains, either on the foot path, grassed areas or within the water of the lake. This is certainly a safety hazard. Our last walk was only one lap of the lake and within that distance we picked up three separate lots of fishing line, one of which had a hook that lodged itself into my thongs. This is an environmental hazard to us all and the poor animals and wildlife that use the lake. Paul Cheek

Women in Science On International Women's Day a panel of distinguished women scientists (photo below) gave advice to a hall full of aspiring young women scientists who are studying STEM subjects at UniSA Mawson Lakes. MLL attended the discussion and summarised the main points in the 10 tips below. Ed 1.

Start to establish your career while still at university through work experience and international research by seeking out opportunities.

Understand your purpose and what you are trying to achieve and focus on experiences that will move you forward.

We live in the 'connection economy' so build networks by joining STEM clubs, building coalitions with admin staff, professionals in related disciplines and other successful women. Listen to the people you aspire to be.

Beautiful Garden Award Gardening in diagonal rows Every morning when Stan wakes up he has a head full of ideas about his garden. These ideas fill his front yard in a beautiful display of mixed colours. They stretch out onto the wide verge where he has a most creative and geometric garden. Diagonal rows of leafy plants crisscross the verge in neat array. "Straight lines are so boring," said Stan who takes his inspiration from council gardens all over Australia.

Keeping the soil in good condition is essential advises Stan, so at the moment he is trying grape compost. At other times he digs cow manure down to 20cm because his soils are clay and heavy.

Mixed together at the front of 21 Lomond Circuit are waves of Cineraria Silver Dust, Little Ruby with bright burgundy leaves, plus Lotus Red Flash that adds contrast with compact soft blue green foliage. "Just wait for spring when these plants burst into fiery crimson resembling a parrot’s beak," said Stan.

"Presently I'm having problems with white grubs that are eating the roots of my plants and I’ve lost a few, so I'm researching the internet for control methods."

Stan and his wife Irena, who works in the garden with him, have lived in the elegant and well-cared for house since 2016 when they were some of the first in their street. "A nice house and a nice garden work well together," said Irena.

The couple love their trees and have four jacarandas plus a dozen lilly pilly bushes along the side fence that they shape every three months. Purple statice pokes its pretty head through the fence that adds to a show-stopping streetscape.

Research - Vertical gardens: Beating heat the green way! In South Australia as we seek ways to keep cool under a relentless sun, Rosmina Bustam, a PhD student at the School of Natural and Built Environments is experimenting with a new method. Her Vertical Greening System (VGS) or living green wall, as it’s called, is at an atrium on the Mawson Lakes campus. So, what are vertical gardens? These are plants grown on vertical landscaping. They can be divided into two categories according to their design green facade and living wall. Green facades are walls covered with climbing plants/climbers, e.g. ivy walls. Living walls refer to walls with plants grown in multiple pots or pockets attached to a structure. Rosmina says the benefits of vertical greening are numerous.

"(Vertical gardens) create an extra insulation layer to the wall which produces a microclimate of its own (at the surrounding area) hence helping to lower the temperature of the wall. This means less energy is required from air-conditioners to cool the building." "Similarly, in winter, the extra layer of insulation helps the building façade maintain its temperature and allows it to retain its heat. Studies on VGS show that they not only help in saving energy but also increase property value, improve health, air quality and acoustics," says Rosmina. A vertical greening system is easy to create. You can choose to plant creepers – preferably on a trellis, on the ground or in a planter box. Alternatively, you may choose to install a living wall where you can grow your herbs, favourite flowers and plants.

Plant selection is crucial and depends on your building orientation – for example, a northern or western facing wall may not be suitable for shadeloving plants. Irrigation, overflow, fertilising and maintenance plans should be in place before you start. Developments in Mawson Lakes Traffic management, street parking, approval for high rise developments, and ways to stimulate the commercial streets of Mawson Lakes were part of the discussion at a Lion's Club Business Breakfast with guest speaker Terry Sutcliffe, City of Salisbury General Manager of Development.

He outlined recent applications for development that included an 11-story medical and accommodation facility on Elder Smith Road, the 3-story Capital Centre, the 8-story Emperor building due for completition in December 2019, the Aldi store opposite Target, a new childcare centre with 112 places on Main Street, 60 residential projects in and around Technology Park and the increasing interest by developers in building apartment blocks. Terry explained that Council works with the State Government to develop strategic plans and identify opportunities for development. For example, in Technology Park there are opportunities to form strategic alliances with emerging space industries. Questions from the 150 strong audience showed that attendees were seeking solutions to local issues that affect day to day life. These centred on parking, overdevelopment, lack of community activites and entertainment for residents, and what Council is doing about the many empty premises in the commercial streets that casts a non-progressive shadow over the area. Discussion back and forth kept returning to the lack of vibrancy and community engagement in Mawson Lakes. An audience member who runs an IT business, compared the sluggish nature of business in Mawson Lakes, which is supposed to be a 14

Parafield Airport got a mention when Terry said it makes an important economic input to the area. "We want to see the airport thrive and intensify its training programs, but we want to see better quality buildings on airport land."

"Big business is being attracted to Mawson Lakes which offers space for growth, a central location in SA and synergy with the university, defence and other high-tech, highvalue industries." Energy Consultant Steve Byerley from Tindo Solar in Technology Park told MLL he is excited about reaching into new markets with his company's quality Australian-made products as the energy-conscious, residential population grows here. Small business owners raised issues about the transition from home-based businesses to commercial premises and suggested that co-working spaces and cheaper rents would be an incentive. Terry replied, "we are looking at models in other areas to see how this could work in Mawson Lakes." Ed

The New Child Care Package A new childcare centre with 112 places is being built on Main Street in Mawson Lakes, and from 2 July 2018 Australia will have a New Child Care Package. The new, simpler package will replace the current Child Care Benefit and the Child Care Rebate with a single Child Care Subsidy. Some of the key changes that you can expect to see from the New Child Care Package include: • The Child Care Subsidy will be subject to a new, three-step activity test. Families will be eligible for 36-100 hours of subsidised child care per fortnight depending on their combined hours of work, training, study or other recognised activity. • Low income families who don't meet the activity test criteria will still be able to access 24 hours of subsidised care per fortnight. • Children must meet immunisation requirements and both parents must work or study at least 8 hours a fortnight to receive the subsidy. • Exemptions to activity tests for parents who cannot meet the requirements, such as those receiving Disability Support Pension and other circumstances will be on a case-by-case basis. • Up to 85 per cent of the actual fee charged (to an hourly rate cap) will be paid direct to the supplier. Kitty Kat Angel Rescue

by Nigella To atone for all the cats I've chased, I've made friends with Kitty Kat Angel Rescue and given a donation to help care for kittens and cats that are rescued from Mawson Lakes, and other places. Mel Gibson, the chief volunteer who rescues abandoned kittens, tells the story of a ginger mummy cat with five babies that a Mawson Lakes resident reported seeing in the long grass beside Dry Creek. Mel took the cat family home, fed them, vaccinated them, taught them to trust humans and then found forever-homes for them. Isn't this good. And by desexing them they will not be adding to the huge problem of abandoned cats, says Mel. Kitty Kats is a registered charity, run by volunteers out of Mel's garage. Mummy and I met her and her daughter Rhiannon at Paddy’s Market at Pooraka where she has cute cuddly kittens looking for love on adoption days.

"Each cat has a distinctive personality and I try to match the personality of my cats and kittens to their new family," said Mel. Mel started the rescue in 2015 after she lost her own baby. "I just needed something to focus on and something to nurture, and because I grew up on a farm in an animal-loving home I channeled my love into making sure abandoned kittens found a happy life." Recipe - Plum and Berry Cobbler Plums are at their best in autumn so use up the soft ripe ones in this cobbler that makes its own sauce. A cobbler is a roughly thrown together dish, so this recipe is quick and easy. You can reduce the sugar and calorie count by using artificial sweetener and a dollop of zero yoghurt. Ed

FRUIT BASE Roughly slice about 4 plums, remove stones and place in the base of a deep baking dish. Leave skin on plums. Mix in 1 cup of mixed berries - fresh or frozen. Toss fruit together with 1/3 cup caster sugar.

COBBLER TOPPING Mix together in food processor: 1 cup self-raising flour 100g unsalted butter, chopped Âź cup caster sugar 1/3 cup milk 1 tsp vanilla Distribute the cobbler mix roughly over the fruit. Sprinkle with flaked almonds. Cook 45-50 minutes in moderate oven until golden. Delicious served with cream, ice cream or yoghurt.
