HELLO This Spring feels like an awakening, a new beginning after a long hibernation, it’s time to come alive and thrive. We have all had to find ways to nourish ourselves, our loved ones and our environments to help us to get through the past few months, learning many lessons along the way. I have found a focus on my inner and outer worlds to be of equal importance and that being at home without whizzing about has had many positive aspects too. As we begin to rekindle connections with friends and family, we will appreciate all the more that we can share both stories, smiles and good food. I can’t think of anything better than seeing my friends together around a table in the garden, surrounded by spring flowers and birds cheerfully chattering. I love to be outside and last year my vegetable garden was a colourful sanctuary, abundant with wonderful produce. It has been an inspirational source of ideas and delicious new recipes. Over the year, my team and I have worked especially creatively, designing and finding treasures for our Spring collection. We are proud to have been able to continue to support our partners and artisans whose own small businesses have also had a precarious time of it all. That’s why this collection has a special feeling of collaboration and is a small but symbolic triumph over a challenging year for everyone. We have endeavoured to capture the spirit of the season and have also included your favourite pieces; some in new colours and sizes by your request! We hope you love the new collections as much as we do. Have a brilliantly happy and optimistic Spring everyone!

ORANGE DRIZZLE CAKE

A satisfyingly simple and delicious cake, full of vitamin c and sunshine - one you will turn to time and time again.

SE R VE S 8 -10 Whipped double cream for serving For the cake 200g very soft butter, plus extra for greasing the tin 200g golden caster sugar 4 eggs 1 tsp vanilla extract 50g polenta Zest of 2 oranges 1 tsp baking powder 150g self-raising flour

Pre-heat the oven to 180°C / 160°C (fan). Grease a 27cm spring form cake tin. In a large bowl, mix together the butter and sugar using an electric whisk until pale and creamy. Whisk in one of the eggs, the vanilla extract, polenta, orange zest and baking powder, followed by another egg and 50g of flour.

For the drizzle The juice of 1 large orange 3 tbsp icing sugar

Repeat twice with the remaining eggs and flour. Dollop the cake batter into your cake tin and spread evenly. Pop into the middle shelf of the oven and bake for 20 minutes. Remove the cake from the oven and leave in the tin. While it is still warm, poke all over with a skewer. Whisk the orange juice and icing sugar together and drizzle into the little holes. Leave to cool and absorb the liquid.

Remove the cooled cake from the tin, decorate as desired and serve with whipped double cream.
