Giuseppe and Bridget set about reshaping the pizzeria (building a special oven) and the pizzas themselves (slow-rising sourdough) and creating a simple menu with quality ingredients. Giuseppe, originally from Positano, was strongly influenced by Neapolitan cuisine in his experimental pizzeria efforts.
